Weekend Sweets: 100 Calorie Cupcakes - Not a Total Fail

Alright, so I tried these 100 calorie cupcakes from the Biggest Loser, and the cupcake part is great! It has no sugar in it, and it tastes good, yes, believe it! The "frosting" on the other hand is absolutely disgusting. So, I'm going to post the recipe because it was a partial success. I am thinking of ways to make a low calorie frosting that doesn't make me want to throw up, so I'll post it when/if I do! They do look beautiful though!
Ingredients:
Cupcakes:
5 egg whites
3 T honey
a pinch of salt
2 t vanilla
1/4 C greek yogurt
1/2 C whole wheat flour
1 t baking powder
Frosting: (Don't make this, I just wanted to show you what the "frosting" was made from!!!)
1 C nonfat cream cheese (softened)
1 C raspberries + extra to top

Step 1: Preheat oven to 325. Whip egg whites for 3-4 minutes on medium until they begin to hold their shape. Increase to a high speed and add the honey, salt and vanilla until the mixture holds a soft peak. Gently fold in the yogurt.

Step 2: In a separate bowl, sift the flour and baking powder together. Fold in the dry ingredients to the egg mixture a little at a time until fully incorporated.

Step 3: Scoop the batter into 14 cupcake tins (use the foil lined ones). Bake for 15-20 minutes until they are golden and spring back when you push them with your finger. Let cool and then find a better frosting than this one!


Seriously, try this cupcake recipe, it's really really good. If you can think of a tasty and "healthy" topping for this recipe, let me know!
