Weekend Sweets: Banana Brunch Bars

This is my Aunt Denise's recipe, and it is a family favorite. It's a great way to use up those over ripe bananas. These are kind of like a moist coffee cake type thing. They make a perfect breakfast pastry, dessert, or sweet snack.
Ingredients:
1 C sugar
1 1/2 C flour
1/2 C shortening
1/2 t vanilla
2 eggs
1/2 t baking soda
1/2 t salt
1/3 C milk
3 medium mashed ripe bananas

Topping:
2/3 C sugar
1/2 C flour
1/4 t cinnamon
1/2 stick butter (melted)

Step 1: Cream sugar and shortening. Add vanilla and eggs, mix. Sift dry ingredients and add to the mixture. Add milk and mix. Add bananas and mix.

Step 2: Pour the mixture into a greased 9x13 pan.

Step 3: Mix the topping ingredients together until crumbly. Sprinkle evenly on top of the banana mixture. If you want it to be extra crunchy and dessert-like, double the topping recipe.


Step 4: Bake at 350 for 45 minutes.
