Strawberry White Chocolate Pancakes

Yum and a half; these are delicious! This is a great recipe for those special breakfasts, birthdays, holidays, etc. We made this for Easter and it was tasty. I found the recipe for pomegranate and white chocolate chip pancakes here, but since the store didn't have any poms, I swapped them out for strawberries and adjusted the recipe a smidge. The strawberries and chocolate make these pancakes very sweet, but the pancake batter itself is a little richer and heartier than regular pancakes. They compliment each other very well. This recipe made 12 small pancakes.

Ingredients:
2 eggs
1 tsp vanilla
2/3 cup skim milk 

4 tsp brown sugar
1 cup oats
1 cup wheat flour
1 tsp baking powder
1/2 tsp salt

1/2 cup finely cut up strawberries
2/3 cup white chocolate chips
Extra strawberries to top

Step 1: Mix your wet ingredients in one bowl and your dry ingredients in a separate bowl.

Step 2: Mix the contents of the two bowls together. Then add in the cut strawberries and the white chocolate chips.

Step 3: Fry up your pancakes (don't make them too big) and serve with the extra strawberries and a little butter. These bad boys don't need any syrup!
