Weekend Sweets: Red Velvet Cupcakes with Cream Cheese Frosting

This weekend I made these delicious red velvet cupcakes with cream cheese frosting for a friend's birthday. I used this recipe and just cut it in half so that it makes 16 cupcakes. They were a big hit and I will definitely be making them again and again! Plus, they look really beautiful and decadent, but are easy to make!
 Ingredients:

Cupcakes:
1 1/4 C flour
1/4 C cocoa powder
1/2 t baking soda
1/4 t salt
1 stick butter (softened)
1 C sugar
2 eggs
1/2 C sour cream
1/4 C milk
1 t vanilla
red food coloring (I just used as much as looked good)

Frosting:
4 oz cream cheese (softened)
2 T butter (softened)
1 T sour cream
1 t vanilla
8 oz powdered sugar

Step 1: Preheat oven to 350 and line 16 muffin tins with cupcake liners.

Step 2: In a bowl, sift together flour, cocoa powder, baking soda and salt.

Step 3: In a separate bowl, cream butter and sugar together. Add eggs one at a time and continue to mix at a low speed. Once incorporated add sour cream, milk, vanilla and food coloring.

Step 4: Slowly add in the dry sifted ingredients until well mixed. Scoop into cupcake liners (fill 2/3 full) and bake for 20-25 minutes until toothpick comes out clean. Let cool completely before icing.

Step 5: For the frosting, beat together cream cheese, butter, sour cream and vanilla until well mixed. Slowly add in the powdered sugar until smooth and creamy. Frost your cupcakes! This frosting is fun because it has a lot of flavor but isn't overpowering and is quite beautiful too.
