This recipe is really really good and it's low calorie, less than 50 calories per cookie. It's also vegan, which is kind of fun, I'm not vegan or anything, but I appreciate a good vegan recipe, especially for baked goods! Here's where I got the original recipe and I changed it a bit. This recipe makes about 40 cookies. We had some people over the day I made them and the four of us (five if you count Ada) managed to eat all but eight of the cookies. I'd say they were a hit!
Ingredients:
1 C canned pumpkin (not the pumpkin pie mix)
1/2 C applesauce
1 t vanilla
1/2 C brown sugar
1/2 C sugar
1 C wheat flour
1 C flour
1 t baking soda
1 t baking powder
1 t cinnamon
dash of ground cloves
dash of ginger
dash of nutmeg
Step 1: Preheat oven to 350. Mix the first five ingredients (pumpkin, applesauce, vanilla, brown sugar, and sugar) in a bowl until well mixed.
Step 2: Combine the rest of the ingredients in a separate bowl and then add to the pumpkin mixture. Mix well.
Step 3:
At this point, it'll be more of a batter like consistency instead of a
cookies dough, but that's ok. Plop cookie sized globs onto a greased
cookies sheet and bake at 350 for 18 minutes.
