Ingredients:
8 oz light sour cream
3/4 C sugar
1 egg
2 T flour
2 t vanilla
1/4 t salt
2 1/2 C fresh blueberries
1 unbaked pie crust (9 inch)
Topping:
3 T flour
2 T sugar
3 T chilled butter (chopped into small bits)
4 T chopped pecans
Step 1: Preheat oven to 400 degrees F
Step 2: Mix sour cream, sugar, egg, flour, vanilla, and salt until smooth. Gently mix in blueberries. Spoon into the unbaked pie crust.
Step 3: Bake for 25 minutes.
Step 4: Prepare the topping. Mix the flour, sugar, and chilled butter (use a hand held pastry blender) until crumbly. Fold in the pecans.
